Late Night Healthy Snacks


You know it happens all the time.  You've been so good all day and are just about to blow it when those cravings start to sneak up on you!

Late Night Healthy Snacks to the rescue!

Strange But True,  Chocolate Avocado Milkshake

Blend together ½ ripe Hass avocado,  , 2  T brown sugar, 2 T cocoa powder, 1 tsp vanilla, 1 ½ c skim milk  Add ice, or pour over ice.  Slurping a smooth, yummy blend of vitamins and a serving of veggie nutrients.     Considered a traditional treat in Vietnam.

Broiled Cauliflower:

Preheat oven to 350 degrees and cut a head of cauliflower in bite sizes. Toss with 1 1/2  T extra virgin olive oil and bake in a pan for 10  minutes til soft.  Then, sprinkle with ¼ cup grated parmesan cheese, 1 T pine nuts, (optional) and broil 3-5 minutes, til almost burnt.  Remove from oven, place in a bowl, squeeze on juice of one lemon, toss with sea salt to taste.    Alternative to popcorn!!

Quick Omelet:  Spray non stick pan with PAM, Pour in 4 beaten egg whites, add a handful of baby spinach til wilted, add one T crumbled Feta Cheese, fold omelet over and serve!   Salt and pepper to taste.  Or just scramble the thing.

Midnite Ramen Soup:  Yes, just get that instant pack of noodles, prepare according to package. Halfway through cooking the noodles, add a big handful of whatever veggies you have on hand, chopped baby spinach, bell peppers, scallions, grated carrots.  When noodles are cooked, reduce  to simmer,  add the seasoning packet and stir.  Carefully crack two eggs on top.  After 3-4 minutes when whites have firmed up but yolks are still runny add some hot sauce to taste.  Gently ladle into bowl and garnish with sliced scallions if you like.  Delish!
